Modify the Easy Ecommerce module settings as needed.
Modify the Easy Ecommerce - Shopping Cart module settings as needed.
Create product links (including price) in the Easy Ecommerce - Shopping Cart module.
Add the links you created to each of the products in your product page(s).

I want to collect dues or allow customers to make invoice payments

Create product links (including price) using the Easy Ecommerce (Core) modules Direct Buy Link option.
Add the link to the product information page.

Create a page and place the Easy Ecommerce - Shopping Cart module.
Create a page and place the Easy Ecommerce (Core) module
Modify the Easy Ecommerce (Core), Easy Ecommerce - Shopping Cart , and Easy Ecommerce - Inventory Catalog module settings as needed
Create your products in the Easy Ecommerce - Inventory Catalog module.

I want to sell documents for immediate download once purchased

Modify the settings in the Easy Ecommerce (Core) module, adding a page redirect, as well as adding a DNN user account that will have access to your secure page containing the downloadable file.
